Ingredients:

  • Egg - 2 (large free range egg yolks)
  • Mustard powder - 1/2 tsp
  • Salt s- 1/2 tsp
  • Vegetable oil -  2 cups
  • Lemon Juice - 10 ml
  • White wine Vinegar - 2 tbsp
  • Black Pepper powder - 1 tsp

Method :

Whisk together all the ingredients except the oil. Add half of the oil, drop by drop, whisking all the time, A tea towel will prevent the bowl sliding over the worktop while you whisk.

The sauce begins to thicken once about the oil has been added. At the stage, add oil faster pouring it in a thin stream while you continue to whisk vigorously.

The finished mayonnaise is rich and thick.
